Notes: If there’s such a thing as “The National Fruit” the apple is arguably at or near the top. I worked for almost a decade with a grower who had 550 apple trees, and I learned about the different varieties and their ripening schedules, and lifted more bushels of apples than I care to count. Besides the descriptions and histories of the 192 varieties there is also information on diseases, disease resistance, interior and exterior descriptions, pollination requirements, ripening seasons, orchard design, pruning, propagation, and pests. No recipes per se, but descriptions of how to make butters, vinegars, ciders, applesauces, etc. Doesn’t include some of the newer hybrid varieties you’re starting to see in the stores (Cosmic Crisp, Pink Lady, Jazz e.g.) My favorite? Arkansas Black.
